To start you are going to prepare all of your ingredients. First peel and chop your potatoes into 2 inch cubes. Next wash and finely slice your leeks.
Add 1 tbsp of butter to a large pot on a medium to high heat. Allow the butter to melt.
Add the leeks and allow them to sweat off for around 7 minutes.
Next add your potatoes to the pan and add another tablespoon of butter just to coat the potatoes slightly.
Add around 500ml of chicken stock or however much is needed to cover the leeks and potatoes.
Bring to the boil and then leave to simmer until the potatoes are cooked through.
Add salt and pepper to taste and lightly mash the potatoes.
Serve hot and enjoy with a bread roll.
