- 25½ g sultanas
- 17 g Dried Currants

Mix all fruit in a large Saucepan.

Add water to cover fruit. Bring water to boil. Simmer for 5 minutes. Preheat oven to 130 degrees

Grease and line roasting tin with grease proof paper. Roasting tin roughly 28cm Square.

- 51 g caster sugar

Add eggs to caster sugar. Combine thoroughly.

Strain water from fruit. Return fruit to saucepan.

- 34 g butter
Cut butter into blocks and add to fruit in saucepan. Allow butter to melt.

When butter has melted, add combined egg and sugar mixture. Stir to mix.

- 51 g Self Raising Flour
Add sifted flour and stir thoroughly.
Step 9/ 10
Pour mixture into prepared tin. Ensure evenly distributed throughout.

Generously sprinkle Demerara Sugar over mixture. Place in the oven for approx 2hrs
