Preheat the oven to 180°C/350°F. Slice the jalapeños in half lengthwise and carefully remove the seeds and membranes using a small spoon. Fill the hollow halves generously with shredded cheese.

Wrap each stuffed jalapeño tightly with a slice of bacon, ensuring the cheese is well-covered. Place the poppers seam-side down on a baking sheet lined with parchment paper. Bake for approx. 30 min. until the bacon is crispy and the jalapeños are tender.
