How to flood royal icing

- Infinity⅞ egg whites
- Infinity⅞ g confectioner’s sugar
- Infinity⅞ tsp vanilla extract
- assorted food coloring

Add egg whites, confectioner’s sugar and vanilla extract to the bowl of a stand mixer fitted with a paddle whisk. Beat for approx. 7 - 10 min. Mix with desired food coloring.

Transfer to a piping bag fitted with a small, round nozzle. Trace the edge of your cookies with a line of icing, then fill in the center. Pop any air bubbles that emerge with a toothpick. Let the cookie dry for approx. 6 - 7 hrs.
