How to cook sushi rice

fine sieve, cast iron pot (with lid), cooking spoon
Step 1/ 3
- 100 g sushi rice
- fine sieve
Add rice to a fine sieve and rinse with cold water, swirling your hand through the rice until the water runs clear. Let drain thoroughly.
Step 2/ 3
- 117½ ml water (cold)
- cast iron pot (with lid)
Transfer rice and water to a pot and let soak for approx. 30 min., if desired. Bring to a boil over medium-high heat, then cover and reduce heat to low. Let simmer undisturbed for approx. 12 min.
Step 3/ 3
- cooking spoon
Turn off heat and let rice rest for approx. 10 min. before serving. Enjoy!
