Preheat oven to 325f or 170C.
In a small saucepan, add the honey, butter, 1 teaspoon ground cinnamon. On medium heat, stir until melted. Once the mix begins to bubble, keep stirring for about 2 minutes
Put the nuts in a large mixing bowl and add the honey mixture, stirring so everything is combined and the nuts are nicely coated
Pour the nuts onto 2 large baking sheets. Line them with parchment paper to avoid sticking. Spread the nuts out as much as possible to allow them to brown evenly in the oven. Place in the overnight for 20 minutes
Halfway through baking, or when the nuts begin to turn brown, use a spatula to turn them over then return the nuts to the oven for the remainder of the time. If the nuts need longer put them back in the oven...but keep an eye on them to make sure they don’t burn!
Once done, remove from the oven and let sit for about 15 minutes. Then transfer to a mixing bowl and add the sugar and 1 teaspoon of cinnamon, together with the salt. Use the slotted spoon to combine everything
Turn the nuts out on to a fresh sheet of parchment and spread out so they are not clumped together. Allow to cool and dry, this could take a few hours
