Transfer pork neck into a bowl. Season with salt and cover with honey-mustard sauce. Cover with plastic wrap and marinate in the fridge for approx. 12 hrs. or overnight.
Preheat the oven to 140°C/280°F. Transfer pork into a baking dish and roast for approx. 5 – 6 hrs. Turn and brush with sauce every hour. Remove from the oven when the meat is tender. Using two forks, shred the pork.
Peel and finely slice onion. Halve and toast burger buns. Spread honey-mustard sauce on the bottom half. Layer with pulled pork, onion rings, burger pickles, and some more honey-mustard sauce. Top with the top half of the burger bun and enjoy!
