    Soak gelatin sheets in a bowl of cold water. Add water, sugar, and corn syrup to a saucepan over moderate heat. Let boil until sugar dissolves and the temperature reaches 125°C/255°F.

    Add strawberry purée and grate tonka bean into a small saucepan. Add gelatin sheets to the saucepan and let dissolve. Then pour strawberry mixture into the egg white mixture, and beat on medium speed until marshmallow is thick and the bowl is completely cool to the touch.
