|70 ml||milk (divided)|
|40 g||fresh yeast|
|140 g||butter (cold)|

Add flour and salt to a stand mixer with dough hook attachment. Mix well to combine. While mixing on low speed, add two thirds of the eggs and all the egg yolks.
Add most of the milk to a pot over low heat. Add sugar and fresh yeast and whisk thoroughly. Add to flour mixture and mix on medium speed until a smooth dough starts to form. Add most of the butter to the flour mixture and mix until butter is completely integrated.
Lightly flour dough and work surface. Knead dough and form into a ball. Transfer to a lightly floured bowl, cover with a kitchen towel, and let rise for approx. 1 hr.
Preheat oven to 180°C/350°F. Flour work surface, knead dough, and roll into a log. Grease a loaf pan and transfer dough to loaf pan. Cover with a kitchen towel, and let rise for approx. 30 min.
Transfer to preheated oven and bake at 180°C/350°F for approx. 20 min. Remove from oven. Separate the remaining egg and set the white aside for another use. Mix egg yolk and milk, and lightly brush on to bread. Return to oven and bake for another 15 – 20 min. or until golden brown. Enjoy!
Lightly flour work surface again and knead again the dough. Roll into a log. Grease baking dish with butter and add dough. Cover and set aside for approx. 30 min.
Transfer to the preheated oven at 180°C / 350°F and bake for approx. 20 min. Remove from the oven. Mix the egg yolk with the milk. Brush the bread with the mixture. Return to oven for approx. 15 - 20 min. Bake until the bread is golden brown.
