Hiyayakko (Japanese cold silken tofu)

- 200 g silken tofu
- 1 stalks scallions
- 5 g ginger
- paper towels
- cutting board
- knife
- fine grater
Carefully remove silken tofu from packaging, drain excess water, and let it sit on a paper towel for approx. 10–15 min. Slice scallion into fine rings and place immediately into ice water. Peel and finely grate ginger.

- 1½ tbsp ponzu
- ½ tbsp sesame oil
- 2 bowls (small)
- plate (optional)
Place tofu on a small plate or bowl. Distribute grated ginger and scallions on top. Mix ponzu sauce and sesame oil in another small bowl.

- 1 tsp sesame seeds (toasted)
- lime zest (for garnish)
- rice (cooked, for serving)
Just before serving, drizzle the ponzu sesame sauce evenly over the tofu. Sprinkle with toasted sesame seeds and add a little grated lime or yuzu zest on top. Serve with cooked rice, if desired, and enjoy immediately.
