"This is my go-to breakfast, because it’s super easy to prepare in advance. Most importantly, it’s super healthy! This chia pudding is vegan, low (net) carb, high fiber, high in healthy fats (polyunsaturated and monounsaturated), and high in protein (20 grams)! My favorite non-dairy milk to use with this recipe is unsweetened vanilla flax milk, because it complements the vanilla theme and adds 8 grams of protein per cup. Enjoy!"

Lastly, allow the mixture to sit in the fridge overnight, at least 6 hours or more for optimal results. This resting period will allow the pudding to become firm and gelatinous while the seeds absorb the liquid. It’ll be ready for you to consume in the morning, so dig in and enjoy!
