Healthy Overnight Blueberry Vanilla Vegan Chia Pudding
"This is my go-to breakfast, because it’s super easy to prepare in advance. Most importantly, it’s super healthy! This chia pudding is vegan, low (net) carb, high fiber, high in healthy fats (polyunsaturated and monounsaturated), and high in protein (20 grams)! My favorite non-dairy milk to use with this recipe is unsweetened vanilla flax milk, because it complements the vanilla theme and adds 8 grams of protein per cup. Enjoy!"

- 8 tbsp chia seeds
- 4 tbsp Swerve Confectioners Sugar Substitute

Whisk together the dry ingredients in a medium bowl.

Add in the wet ingredients and whisk everything together to combine.

Use a spatula to mix in the whole blueberries, then transfer the mixture to an airtight container for storage in the fridge.

Set the timer for 1-2 hours, and then place the container in the fridge to begin firming up. When the timer goes off, give the mixture a final stir before allowing it to sit in the fridge overnight (6+ hours).
