Healthy Coconut Cashew Granola
Preheat the oven to 180°C / 350°F.
- 25 g rolled oats
- 10 g roasted, salted cashews
- 10 g puffed rice cereal
- 1½ tbsp cashew butter (sub other nut butter)
- ⅛ tsp salt
- ½ egg white
- 1 tbsp honey
Whisk the egg white lightly for 20 seconds in a small bowl. Add the dry ingredients except for the coconut flakes. If the cashew butter is too firm, you may need to melt it. If not, add cashew butter and honey into the mixture. It should be sticky but not wet.
- 25 g unsweetened coconut flakes
Place on a baking tray and flatten. Bake for 10 minutes then toss lightly and add in coconut flakes. Bake for another 5 minutes.
Let cool 10 minutes before breaking up into pieces. Add honey for extra sweetness. It is perfect served atop yogurt or oatmeal.
