Grilled Ricotta Chicken
"This is a recipe I came up with to help my husband and myself eat healthier meals. He is extremely difficult to cook healthy for, and even he loved it! Serve with whatever veggies you like in the topping and as a side. E.g. you could have it with a side of grilled asparagus instead of potatoes. You could even replace the cheese with mashed chickpeas for a different flavour, and you could also make it vegan friendly by replacing the chicken with tofu or a slice of eggplant too. Get creative!"

Step 1/8
- 1 onion
- 1 bell pepper
- 100 g Spinach
- 1 clove garlic
- 3 potatoes
Preheat oven to 200 degrees Celsius. Chop onion, bell pepper, spinach, garlic, and potatoes. (Get creative, use whichever veggies you like!)
Step 2/8
Add chopped potatoes to a baking sheet. Drizzle with olive oil and season with a bit of salt, then cook in oven for about 30 minutes or until a fork inserts easily.

Heat olive oil in a pan and pan fry the onion, bell pepper, spinach and garlic.
Step 4/8
- 100 ml White wine
Deglaze pan with white wine.
Step 5/8
- 300 g Ricotta cheese
Mix the pan fried veggies with ricotta cheese. (I use light ricotta to be a little bit healthier.)
Step 6/8
- 2 Chicken breast
- Pepper
- Salt
Season the chicken breast with salt and pepper, and grill it in the same pan.
Step 7/8
Top the grilled chicken with veggie and ricotta mixture, and plate the roasted potatoes as a side.

- Lemon slice
Serve with a lemon slice and enjoy!
