Ingredients

green lentils
¾
coconut milk tin

onion
4 tsp
curry powder
2 cloves
garlic
½
ginger (grated)
potato
1 tsp
salt
2 tsp
ground cumin
2 tsp
ground coriander
1 tsp
sweet paprika powder
4 tbsp
soy sauce
750 ml
water
1
vegetable stock
oil (for frying)

  • Step 1/ 10

    • 1 onion

    Chop onion

  • Step 2/ 10

    • oil (for frying)

    Heat pan on medium. Add chopped onion and stir occasionally until soft.

  • Step 3/ 10

    • 2 cloves garlic
    • ½ ginger (grated)

    Roughly chol garlic and grate ginger and add to pot.

  • Step 4/ 10

    • potato
    • 1 tsp salt

    Slice potato into medium peices and add to pot with salt

  • Step 5/ 10

    • 4 tsp curry powder
    • 2 tsp ground cumin
    • 2 tsp ground coriander
    • 1 tsp sweet paprika powder

    Add all spices into heated mixture and stir for around 5 min

  • Step 6/ 10

    • ¾ coconut milk tin

    Pour coconut milk into pan, stir and cook for 2min

  • Step 7/ 10

    • 750 ml water
    • 1 vegetable stock

    Dissolve vegetable stock in water

  • Step 8/ 10

    • 200 g green lentils
    • 4 tbsp soy sauce

    Add stock water, soy sauce and lentils

  • Step 9/ 10

    Bring pot to boil, then allow to simmer for 40min.

  • Step 10/ 10

    • 2 tbsp butter

    When finished, add butter and extra water if needed
