- ½ red bell pepper
Chop the vegetables in big pieces
In a pan heated put some olive oil and add the head and the shrimp shells. Crash them well with a wooden spoon until all their substance is out.
Add the head or the tail of the fish and its bones and cook it for 2 mins
- 120 ml white wine
Turn the heat on and add the wine and the bay leaves and let it cook for 2/3 mins
Turn down a little bit the heat and add the onion and the red ball pepper. Add the water and the salt and leave it for 30 mins. Be aware of taking away the foam
Strain the broth using a tea towel
