"Gözleme is one of the best street foods ever both in Türkiye and in Germany in my opinion. Whether at the flea market, or a food market, one enjoys the crispy and warm wraps the same; with a glass of ayran and all the lovely goodies bought from the market on the side. Gözleme is also the perfect mid-day snack, it will deliver the perfect pick me up after a long morning of shopping and walking, or the perfect hearty wake up at your breakfast table. Traditionally, the yufka dough is homemade which takes time and skill to get it super thin. So in this easy version, just phyllo dough from the store is the hero! I like to pair it with ayran, and sometimes a herby yogurt sauce, but it’s also great with some turkish tea to be honest. The filling can also basically be whatever you want, as long as it is well cooked, and fits your taste (minced meat, potatoes, herbs, veggies and more)."

  • Step 1/3

    For the easy gözleme filling, start by washing spinach and leek. Then, chop spinach into thin slices, and leek into thin rings. Move chopped veggies into a bowl, crumble feta in, add chili flakes, oregano, cumin, salt, pepper, and olive oil. Mix gently, and set aside.

    Spread phyllo dough and cut into equal square pieces. Place two squares on top of each other, and put approx. 1,5 tbsp of filling and spread. Fill a small bowl with water. Place two more squares on top, and brush every side with water until they stick to each other.

    In a small bowl, mix oil and butter. Brush a frying pan with oil & butter mix and place one gözleme on medium heat. Fry until golden brown spots form. Then, brush the top again and flip. Take gözleme out once both sides have golden brown spots. Repeat until all pieces are fried and serve with ayran or herby yogurt sauce.
