Easy Turkish börek

- 75 g yufka dough
- ¼ egg
- 1 tbsp milk
- 15 g butter (melted)
- oven

- pastry brush
Preheat oven to 180°C/356°F. On a broad surface, spread two yufka dough sheets on top of each other. In a bowl, make the wet mix by whisking egg, milk, and melted butter in a small bowl. Brush all over with the wet mix.

- 87½ g spinach
- ½ stalks scallions
- 45 g feta cheese
- ½ tsp chili flakes
- 1 tbsp oil
- salt
- pepper
- oil (for greasing)
- cutting board
- knife
- bowl
- springform pan (9 in.)
- parchment paper
For the filling, roughly chop spinach and scallion. Crumble feta. Then, combine spinach, scallion, feta, chili flakes, oil, salt, and pepper in a bowl. Grease a springform pan and line it with parchment paper. Place filling along the long side of the dough. Roll the filling in from the same long side.

Roll börek into a spiral inside the baking form, starting from the middle. Repeat outward into a big spiral until the form is full. Once the form is covered, brush with more of the wet mix on top. Sprinkle mixed sesame seeds on top and bake for approx. 15–20 min. in the preheated oven until golden and crispy on top. Serve warm or lukewarm.
