- 35 g bulgur
Cook (or soak) the bulgur until tender according to package directions. Drain off any excess water, and set aside to cool.
- ½ clove garlic
- 10 g mint
- 15 g spring onion
- 12½ g parsley
Cut the tomato and cucumber into small cubes, finely chop the garlic, parsley, mint and spring onion.
In a big bowl combine all the ingredients ( bulgur, tomato, cucumber, parsley, mint, spring onion, garlic, salt pepper, olive oil, lemon juice).
Mix well and let rest for 15-20 minutes before serving.
