Chop the celery, avocado, cucumber, bell pepper, cherry tomatoes and feta cheese into small bite sized pieces and add to a large bowl
Remove the skin from the smoked mackerel (or other fish) and tear into small pieces. Add the mackerel and spinach to the salad bowl.
In a separate pot combine the olive oil, balsamic vinegar and lemon juice to create a simple salad dressing. Pour over the salad and mix well.
Finally, sprinkle the hemp seeds on top. Serve and Enjoy!
