Smoked Salmon Salad with Herb Vinaigrette

Step 1/2
- 50 ml extra-virgin olive oil
- 10 g mixed herbs (parsley, chives, dill)
- ½ lemon
- salt
- pepper
For the vinaigrette chop parsley, chives and dill. Mix in a sealable jar with olive oil, and freshly squeezed lemon juice. Season with salt and pepper. Give it a good shake and set aside.
Step 2/2
- 300 g smoked salmon
- 1 cucumber
Slice cucumbers, cut smoked salmon and arrange on plates. Drizzle with the vinaigrette and serve with whole wheat bread or baguette.
