"I love no-bake cheesecakes, but sometimes it’s a lot of effort. With this recipe, even though you use a hand beater, is really easy. If you want to, you could add fudge pieces etc. "

Ingredients

cream cheese
50 g
double cream
30 g
butter (melted)
50 g
cookies
1 tsp
vanilla extract
2 tbsp
confectioner’s sugar

cooking spoon, food processor (optional), hand mixer with beaters

    • 30 g butter (melted)
    • 50 g cookies
    • cooking spoon
    • food processor (optional)

    Crumble the cookies with your hands, and add to a small bowl with the melted butter. Mix until almost like wet sand, then scoop into a bowl (or how many people you’re serving). Push the crust with a spoon or spatula to make it firm.

  • Step 2/3

    • 50 g double cream
    • 1 tsp vanilla extract
    • 50 g cream cheese
    • hand mixer with beaters

    Add the double cream to a medium bowl and beat until soft peaks form. Then add the cream cheese, vanilla essence and icing sugar and beat until smooth.

  • Step 3/3

    Spoon filling into the bowl with the crust (or divide between bowls) and smooth the top. Put bowl/bowls into fridge and let chill and firm up for about an hour. Serve.
