Double chocolate banana muffins
Preheat oven to 350F and line a muffin tray.
- ⅓ bananas
Mash the 2 extra ripe bananas into a large mixing bowl.
- ⅛ cup sugar
- ⅛ cup plant based milk
- ⅓ tbsp neutral oil
- ⅛ tsp vanilla extract
Add the sugar, milk, oil and vanilla extract to the bananas and mixe.
- ¼ cups flour
- ⅛ cup cocoa powder
- ⅛ tsp baking powder
- ⅛ tsp baking soda
- ⅛ tsp salt
In a medium sized bowl combine the dry ingredients and mixe until evenly incorporated.
Incorporate the dry ingredients to the wet ingredients and mixe until smooth.
- ⅛ cup chocolate chip
Fold in the chocolate chips.
Fill the muffin tins 2/3 of the way full and place in the oven to cook for 18-21 minutes.
Let cool for 5 minutes and enjoy!
