Bring butter to room temperature, line the bottom of a steamer with parchment paper, and put a large pot of water on to boil
Add room temp butter and sugars to a large bowl, beat for 1 full minute
Crack both eggs into the butter/ sugar mixture, beat until very light and fluffy (Do Not Skimp On The Beating)
Sift all dry ingredients into the wet and mix until just combined
Gently mix in chocolate chips
Separate dough into 8 even balls, flatten each ball into 3/4 inch disks
Add dough into the parchment lined steamer, leaving a few inches between each cookie (you may need to steam them in batches)
Steam cookies for 15 minutes or until firm, leave in basket to cool for at least 5 minutes before enjoying!
