“A creamy, cheesy, and delicious pasta for every occasion. It’s healthy, warming and super easy to make ahead of time. Can be made using any vegetables in the fridge and is great for meal prep. It’s a dish you will come back to time after time 😋”

Ingredients

Servings:-2+
200 g fusilli
10 brown mushrooms
¼ bag spinach
1 tbsp flour
1 tbsp butter
40 g mascarpone cheese
60 g cheddar cheese
250 ml milk
½ onion
1 tbsp oil

Utensils

  • saucepan
  • whisk
  • frying pan
  • spatula
  • Step 1/9

    • 200 g fusilli

    Cook fusilli according to package instructions (gluten free pasta works well too)

  • Step 2/9

    • 1 tbsp flour
    • 1 tbsp butter
    • saucepan

    Melt butter in a large saucepan, when melted add the flour and stir well

  • Step 3/9

    • 250 ml milk
    • whisk

    Gradually add the milk whilst continuously whisking the mixture

  • Step 4/9

    When all the milk has been added, turn the heat down to the lowest

    • 10 brown mushrooms
    • ½ onion
    • 1 tbsp oil
    • frying pan
    • spatula

    In a small frying pan sauté the onion and mushrooms in the oil

  • Step 6/9

    • 40 g mascarpone cheese
    • 60 g cheddar cheese

    Add the mascarpone and cheddar cheese to the sauce and stir until melted and well combined

  • Step 7/9

    • ¼ bag spinach

    Add the spinach, mushrooms and onion to the sauce

  • Step 8/9

    Drain the pasta and stir it into the sauce until completely covered
