Classic Chocolate Mousse

- 50 g dark chocolate
Melt the chocolate and set aside to cool.

- 16⅔ g white caster sugar
- 1⅓ eggs
- ⅓ tbsp coffee
- whisk

While the chocolate cools, separate the egg whites from the yolks. Mix well the yolks, sugar and coffee in a bowl with a whisk.

Add the chocolate to the yolk mixture and combine with a mixer.

Whip the egg whites until stiff with the electric mixer. Then, pour the chocolate in with the egg whites, mixing, with a spatula, very gently with wrapping motions until well combined. The goal here is to combine it all without the mixture losing its volume.

Finally, fill small glasses or a bowl with the mousse and let it rest in the fridge for at least 1 hour before serving. Enjoy!
