Food prep the night before - clean chicken thighs; cut meat into bite-sized chunks; marinate overnight in light soya sauce, mirin, chopped garlic and ginger
Grill chicken pieces at 220°C for 10 minutes and lower to 200°C for 15 mins (chicken pieces should be nicely browned and charred in some parts)
Mix chicken with grated cheese
Fill wraps with the cheesy chicken filling, and fold wrap into half
5. Pan-fry wraps for about 1-2 minutes each side until outside is nicely browned and cheese inside is melted
