Cardamom star cookies with pistachio and orange

- ⅛ orange
- 6½ g pistachios
- 6½ g ground almonds
- 8⅛ g confectioner’s sugar
- ⅛ tsp ground cardamom
- salt
- ⅛ egg whites
- ⅛ package vanilla sugar

Preheat oven to 120°C/248°F on convection. Finely zest orange. Then, place pistachios in a food processor and finely grind them with ground almonds, orange zest, powdered sugar, ground cardamom, and a pinch of salt. Transfer to a bowl, add egg whites and vanilla sugar, then knead everything into a pliable dough. Wrap it in plastic wrap and let it rest in refrigerator for approx. 30 min.

Dust work surface with little wheat flour, roll out dough approx. 5 mm/0.2 in. thick. For the meringue, beat powdered sugar with egg white until stiff in a bowl. Carefully spread on the dough, and cut cookies out with a star shaped cookie cutter. Place cut out stars on baking sheet lined with parchment paper. Bake for approx. 25 min., and let cool completely. Serve immediately or store in an airtight container if you're serving later.
