The delicate scent of cardamom, the natural sweetness of pistachios, and the fruity orange give the classic a completely new character. Any true fan of cinnamon cookie stars will appreciate these super light and truly comforting ones as well, right? For those super clean edges: Spread the meringue on the dough first, then cut out the stars. You can roll out the scraps 1–2 times as well and if the dough gets sticky, just add more ground nuts."

    Preheat oven to 120°C/248°F on convection. Finely zest orange. Then, place pistachios in a food processor and finely grind them with ground almonds, orange zest, powdered sugar, ground cardamom, and a pinch of salt. Transfer to a bowl, add egg whites and vanilla sugar, then knead everything into a pliable dough. Wrap it in plastic wrap and let it rest in refrigerator for approx. 30 min.

Carefully spread on the dough, and cut cookies out with a star shaped cookie cutter. Place cut out stars on baking sheet lined with parchment paper. Bake for approx. 25 min., and let cool completely. Serve immediately or store in an airtight container if you're serving later.
