Chop the broccoli, its stem, finely chop carrot and celery, dice potatoes, mash garlic.
In a large pot heat up the butter, add carrot and celery and stir for 3 mins.
Add broccoli, potatoes and garlic and stir briefly.
Add vegetable broth and bring to boil. Let simmer on low heat for 15 minutes.
Add cream (also possible to use vegetable alternatives like soy cream) and salt and pepper to taste. Let simmer for 2 minutes.
Blend soup to your preferred consistency, it can be all smooth, or chunky.
