Ingredients

Servings:-8+
1 bulb onion
2 kg tomatoes
100 ml brown sugar
1 kg potato
½ tsp salt
1 package tomato paste

  • Step 1/6

    • 2 kg tomatoes

    blanch tomatoes so skins are easier to peel off (cover tomatoesiin a bowl with boiling water and leave for 15mins)

  • Step 2/6

    • 1 bulb onion

    cut onions either thin slices or just chopped. Fry onions in olive oil until golden and fragrant.

  • Step 3/6

    Peel and dice tomatoes

  • Step 4/6

    • 100 ml brown sugar
    • ½ tsp salt
    • 1 package tomato paste

    Add diced tomatoes to fried onion. Then add the rest of ingredients (tomato paste, salt, sugar). Let it simmer on low to med heat

  • Step 5/6

    • 1 kg potato

    Wash and cut potatoes (I used soft cooking potatoes which makes it thicker). when using soft potatoes cut them in to bigger sections.

  • Step 6/6

    Add potatoes to the pot & let it simmer for 30mins on med heat
