"This is one of my favourite breakfasts, it’s quick and easy to make. I originally learnt this from my cousin and it has never failed to please the family during breakfast. Plus it’s cheap to make."

banana (overripe)
eggs (large)
80 g
rolled oats
2 tsp
vanilla extract

bowl (small), fork, nonstick pan, frying pan

  • Step 1/ 6

    • 1 banana (overripe)
    • bowl (small)
    • fork

Peel and place the banana in a bow and with fork break and quash the banana until you’re left with a pace with only a few lumps if any.

  • Step 2/ 6

    • 2 eggs (large)

Break the eggs into the banana paste an whisk with the fork until mixed.

  • Step 3/ 6

    • 2 tsp vanilla extract
    • 80 g rolled oats

Add half the oats and mix then ad the other half. Once the oats are mixed with everything add the vanilla extract.

  • Step 4/ 6

    • nonstick pan
    • frying pan

Now heat up a pan to whatever medium heat is on your stove and add some coconut butter or olive oil.

  • Step 5/ 6

Now some of the mixture onto the pan slowly, add as much as you see fit without going overboard.

  • Step 6/ 6

Now, it won’t take long to cook so keep your eye on it, usually takes about 1 minute for each side, you’ll know when to flip the pancake when the edges seem more solid than the centre. After each side has cook for about a minute just place it on a plate, add syrup or anything you want and you’ll have some healthy delicious pancakes.

  • Enjoy your meal!
