Preheat oven to 350 degrees F.
- 1 lime
- 3 tbsp fresh cilantro
- 1 avocado, ripe
Mash avocado in a small bowl. Add 2-3 Tbsp of cilantro and lime juice to taste and stir together.
- 8¾ oz can of whole kernel corn, drained
- ½ cup onion, diced
- ½ cup green pepper, diced
- 1 small jalapeno, diced
In a separate bowl, mix together diced onion, green pepper, jalapeno, and corn.
- 1 tsp cumin
- 1 tsp paprika
- ½ garlic powder
- 1 tbsp extra-virgin olive oil
- salt and pepper to taste
Next, add olive oil and seasonings to bowl - cumin, paprika, garlic powder, salt and pepper. Mix well.
Transfer seasoned vegetables to a baking sheet. Spread out evenly and bake for 15 minutes.
- 2 slices of whole grain bread
Toast bread. Spread avocado on toast.
- 8 oz queso cheese (block)
Crumble approximately 1/4-1/2 cup of queso cheese on top of avocado spread. Lastly, top with vegetables.
