“We call this dish "ABC Tarte": apricot-bacon-chevre. It was inspired by family holidays and market days in Provence. The combination of sweet and savoury is a real thrill. It's a super quick, super easy way to use greens and fruits. There are endless possible varieties. Invent your own!”

1 sheet puff pastry
150 g spreadable goat cheese
apricots
50 g bacon, diced
1 tsp herbes de Provence
pepper

    Preheat the oven to 200°C. Place the sheet of puff pastry onto a baking tray and spread the goat cheese evenly onto it. By the way, ready-made tarte falmbée dough works just as well!

    Rinse the apricots, remove the stones and cut them into small pieces

    Place the apricots onto the spread goat's cheese and sprinkle the bacon cubes on top. Season with herbes de Provence and ground pepper. Bake in the middle of the oven for approximately 15 minutes or until the puff pastry has risen and is golden brown and flaky.
