In a large bowl, sift flour, baking powder and caster sugar and give a little whisk to combine.
In a small bowl, melt the butter in the microwave. Add the egg, milk and vanilla to the butter mixture and stir to combine.
Add the wet mixture to the dry ingredients and gently mix to combine all the ingredients.
Heat a small frying pan on medium-low heat and add a little butter to the pan.
Pour a heaped cup of batter to the pan and cook for 1 to 2 minutes or until a golden colour.
Turn the pancake over and cook for another minute or until golden in colour.
Serve the pancakes with maple syrup.
