Stir flour and add salt
Mix dry ingredients with cool butter using your hands until crumbly. Then step by step add cold water. Form the dough in 2 balls (one is a bit bigger)
Let the dough chill in the fridge for 1 hour
Peel and core apples, cut in two half’s and slice into pieces.
Add cinnamon, lemon juice and sugar to apples and mix
Heat the pan, melt butter and add flour, then mix until smooth.
Add the souse to apples
Roll out the dough (the biggest ball is the first layer) in a round shape. Remove it in the cooking mold. Put all apples in it, then roll out the remaining dough and slice into thin (1,5cm) layers. Weave a lattice crust for the top layer or the upper part can coat the entire pie! Whisk one egg yolk and brush it on the top crust.
Put in the oven 215°C for 15 min, then 180°C for 45 min.
