|200 g||fish fillet (e.g. salmon)|
|10 g||almonds (blanched)|
|1 tsp||mustard (medium hot)|
|3 tbsp||white wine (dry)|
|3 tsp||olive oil (divided)|
Whisk mustard, honey, white wine, and a pinch of salt and pepper in a bowl until smooth. Set aside.
Wash the fish, pat dry, and rub with a part of the olive oil and some salt and pepper.
Roll fish in almonds and press gently to seal. Preheat a small frying pan over medium heat and coat with the remaining olive oil.
While the fish is frying, finely slice the green part of the scallion into diagonal rings.
Serve with prepared sauce and a sprinkle of lemon juice. Enjoy with rice or steamed vegetables.
