- ⅔ cup rice
- 1⅓ cups water
Rinse rice. Put it in a pitcher and let soak for 1 hour.
- 1⅓ cups nondairy milk
- ⅓ cup brown sugar
- ⅔ cinnamon stick OR equivalent ground cinnamon
- ⅓ tsp vanilla extract
Pour water and rice into blender. Add milk, sugar, cinnamon, and vanilla. Blend for 2 minutes.
Pour horchata into pitcher through strainer.
Add ice and serve.
