- 300 g white cabbages
- ½ cucumber
- 1 scallions

Finely shop white cabbage and cucumber. Thinly slice scallions. Transfer chopped vegetables to a large bowl.

- 1 cloves garlic
- ½ shallot
- 10 g chives
- 15 g basil
- 15 g baby spinach
- 40 g cashews (toasted)
- 6 g nutritional yeast
- 40 ml olive oil
- ½ tsp salt

Juice lemons. In a blender, add garlic, shallot, chives, basil, spinach, toasted cashews, nutritional yeast, olive oil, and lemon juice. Season with salt. Blend until smooth, adding more olive oil if needed to loosen the dressing.
