The first step is to heat some butter with a little bit of oil in a sauce pan
Until that heats up,whisk some eggs. You are best to determine the size of the eggs but in this case we need 2 large eggs or 3 medium sized ones,add a pinch of salt and pepper to taste
Prepare 2 slices of toast next to you because we will need it within reach you can use any toast whether its multi grain,milk or white toast.
As the pan heats up, lower the heat and pour in the eggs and then put the toast above the eggs vertically as seen in the pic attached. Quickly dip the toast on both sides so they can have some of the eggs and let it rest.
Bring the heat up a notch and dont move the pan or the toast till the eggs cook through
Add your desired toppings in my case i added white cheddar cheese and turkey slices
Let the cheese melt through but lower the heat and get ready for the magic part.
With a thin flat spatula,we will begin to tuck in the sides of the eggs to the inside above the toast ( as seen in the video) and then flip the lower toast up to rest on the other toast
Let it sit as is for a min so the bread can continue getting crispier and the cheese melts with the eggs
You can cut in half or eat it as a whole. Enjoy it with a fresh juice or coffee!
