In a small bowl mix together the yeast, sugar and 150ml of water . Set aside and let the yeast bloom
In a small bowl mix the psyllium husk and 240 ml of water until you reach a gel consistency.
In a big bowl mix the flour, potato starch and salt
Add the yeast mixture, psyllium gel and apple cider vinegar to the dry ingredients.
Knead the dough for 5-10 minutes
Let the dough rise while you preheat the oven .
Transfer the dough into a cast iron skillet . Fill another pan with water and place it in the oven . Over it place the cast iron skillet with the bread . Bake like that for 30 min and then remove the pan with water . Then bake the bread for another 30 min
Let the bread cool for at least 45 min before cutting it
