Sweet potato mash with Graved-Style seaweed salad
Ingredients
Step 1/ 5
- salt
Bring a large saucepan of salted water to the boil.
Step 2/ 5
- 1 sweet potato (approx 300 g)
Meanwhile, peel and dice the sweet potato before boiling the cubes in the water until soft (use a fork to test the consistency).
Step 3/ 5
- pepper
- 15 g dill (finely chopped)
- 15 g chives (finely chopped)
- 2 tbsp olive oil
Drain off the water then mash the potatoes with the olive oil and herbs (set some aside for garnish). Season to taste.
Step 4/ 5
- 3 tbsp soy yogurt
- 100 g Graved-Style seaweed salad from OCEANFRUIT
- ½ cucumber
Slice the cucumber finely and mix with the Graved-Style seaweed salad from OCEANFRUIT. Then, season the soy yoghurt.
Step 5/ 5
Spoon the mashed sweet potatoes on a plate then dollop or spread the yoghurt on top. On top of that goes the seaweed/cucumber mix. Finally, garnish with the rest of the dill and chives and tuck in!
