Sparkling cucumber with ginger

- 320 g ginger
- 400 ml water
- 400 g sugar

To make syrup, chop ginger and add to a small saucepan along with the water. Bring to a boil. Simmer for approx. 15 min., then add sugar and continue to simmer for approx. 5 min. Pass through a sieve into a mixing bowl to filter out ginger pieces, then let cool.

- vegetable peeler

Peel cucumber and cut into bite-sized pieces. Add to a mixing bowl and purée. Then, pass through a sieve into another bowl in order to filter out any cores.

- 80 ml cucumber water
- 30 ml ginger syrup
- 2 tsp lemon juice
- 300 ml extra dry sparkling wine
- ice
- cucumber slice for garnish
- lemon peel for garnish
- bar spoon
Arrange cucumber slice in a serving glass. Add cucumber water, ginger syrup, and lemon juice and stir. Fill glass with ice and pour over extra dry sparkling wine. Garnish with lemon peel. Enjoy!
