"This recipe combines so many of my favorite things that I hardly know where to begin. Let's start with the grapes, shall we? I honestly don't know why it took me so long to use grapes in savory cooking. Their juicy sweetness gives hearty dishes just the right amount of oomph, which makes perfect sense when you think about how often we use wine or grape juice in sauces, braises, and stews. But grapes don't always have to stay in the background, they can absolutely shine as the main character, just like they do here. Roasted with balsamic vinegar, they become jammy, deeply flavorful, and perfectly blur the line between sweet and savory. Depending on what you pair them with, they could at this point honestly still pass for dessert. Feel free to play around with the herbs here as well, there are so many directions you can take this recipe. The whipped feta adds exactly the salty, tangy contrast the grapes need. And I've said it before, but I'll say it again: be bold. Swap the lemon zest for orange or lime, add your favorite herbs or spices, and make the recipe your own. Last but not least, the corn flatbreads. I'm a huge cornbread fan, but it doesn't always have to come in the form of muffins or a loaf. These flatbreads are a super quick and easy alternative that deliver the same earthy corn flavor and tender texture. They pair beautifully with the sweet balsamic grapes and the bright, creamy feta, making everything come together in one very happy bite."

    Preheat oven to 200°C/400°F top/bottom heat. Cut corn kernels from cob and puree in a blender into a coarse paste. Mix flour, polenta, baking powder, sugar, and salt in a bowl. Add corn paste, olive oil, and yogurt, and knead into a smooth dough. Cover and let rest while preparing grapes.

    Coarsely crumble feta and place in a tall mixing container with yogurt. Grate lemon zest and add to container, season with pepper, and puree with an immersion blender into a smooth cream.

    Divide dough into 4 equal pieces and roll out to approx. 1 cm/ 0.4 in. thickness on a lightly oiled work surface. Cook in a hot pan with a little olive oil for approx. 2–3 min. per side. Spread flatbreads with feta cream, top with roasted grapes and their juices, and garnish with basil.
