Add heavy cream to milk. Pour into a saucepan and add sugar. Deseed the vanilla bean and add vanilla seeds to the saucepan. Whisk and bring to a boil.
In the meantime, whisk egg yolks in a large bowl. When milk mixture starts to boil, add to bowl with egg yolks while whisking vigorously.
Add mixture back into pot and reheat, whisking constantly until thick and creamy. Serve warm with a variety of desserts!
