Cook noodles as it says on its package. Cut onion, sweet potato and eggplant in pretty thin and small pieces. Fry on a pan with oil and sesam oil, garlic.
Salt and pepper as you like. When the noodles are done and the onion and the sweet potatoes are soft, put the noodles in the pan and stir everything well together.
Add a little bit of soy sauce and siracha sauce and the lime. Add coriander if you like. Voila
