Quick and easy wild garlic Hollandaise

- 1 eggs
- 125 g butter
- ¾ tbsp lemon juice
- ½ pinch sugar

To make the Hollandaise sauce, separate egg yolks from whites. Place yolks in a small bowl and save egg whites for another use. Melt butter in a saucepan, making sure it doesn’t brown. In a tall container, mix together egg yolks, lemon juice, salt, a pinch of sugar, and pepper with an immersion blender.

- ½ tsp mustard

Slowly pour the warm, melted butter into the egg mixture while continuously blending everything. Once all the butter is incorporated, the sauce should be thick, light, and smooth. Add water, one tablespoon at a time, until the desired consistency is reached. Finally chop fresh wild garlic and stir it into the Hollandaise along with some mustard. Season with salt and pepper to taste and serve immediately.
