    To make the Hollandaise sauce, separate egg yolks from whites. Place yolks in a small bowl and save egg whites for another use. Melt butter in a saucepan, making sure it doesn’t brown. In a tall container, mix together egg yolks, lemon juice, salt, a pinch of sugar, and pepper with an immersion blender.

Season with salt and pepper to taste and serve immediately.
