Potato and tomato curry
Ingredients
Step 1/7
- 2½ potato (medium)
Peel potatoes, cut into quarters and soak in cold water.
Step 2/7
- 1 onion (small)
Peel and chop onions finely.
Step 3/7
- ½ tbsp garlic
- ½ tbsp ginger
Peel and chop garlic and ginger, or use each one table spoon of ginger and garlic paste.
Step 4/7
- 1 tomatoes
Dice 2 tomatoes.
Step 5/7
- ½ sprig curry leaf
- 1 tbsp oil
Heat oil in a pan, add curry leaves and onions and fry till golden brown.
Step 6/7
- 1 tsp cayenne pepper
- ½ tsp ground coriander
- ¼ tsp garam masala
- ½ tsp salt
Add ginger, garlic, tomatoes and spices and sauté for a few minutes.
Step 7/7
- 125 ml water
Add potatoes and stir. Add 250ml of water, bring to boil, cover with a lid and simmer on medium heat till potatoes are done, about 15min.
