Perfect scrambled eggs

Heat a frying pan over medium-low heat and add butter. Crack eggs into a bowl, season with salt and pepper, and beat. Lift and turn pan to coat evenly with melted butter.
Add eggs to pan and immediately start moving them around with a rubber spatula. Eggs are finished when still slightly wet. Remove from pan, transfer to serving plate, and garnish with scallions. Enjoy!
