"A quick after-work meal: Feta is always in the fridge, all that's missing is a quick topping of scallions, tomatoes, maple syrup, chili (a great counterpart to the sweet maple syrup) and olive oil. The whole thing is rounded off with balsamic vinegar - the oven does the rest. If you don't like it too spicy, season the marinade with chili and smoked paprika powder. Another tip: you can also replace the cherry tomatoes with apricot, peach or nectarine strips, figs or plums (dark fruits with red onion and dark balsamic vinegar) and swap the scallions for a red onion."

    Preheat the oven to 200 °C. Grease the ovenproof serving dishes or a larger oven dish with some olive oil so that the cheese is easier to remove later.

    • 2 packages feta cheese
    • 4 scallions
    • 8 cherry tomatoes
    • 1 bowl

    Place the feta in the oven dishes. Wash the scallions, remove the root ends and cut the scallions slightly diagonally into 2-3 cm thick pieces. Place in a bowl. Wash, dry and quarter the cherry tomatoes and add to the scallions.

    • 2 tbsp olive oil
    • 1 tbsp maple syrup
    • 1 tbsp white balsamic vinegar
    • ¼ chili
    • ½ pinch salt

    Cut the chili into rings. Add the olive oil, maple syrup, balsamic vinegar, chili rings and a pinch of salt and mix well. Spread the marinated vegetable mix around the feta pieces and roast both in a hot oven for around 20 minutes until caramelized. Serve with fresh bread.
