dice cucumber, remove seeds. salt and place in strainer for 30 minutes
scoop 1 cup of yogurt into second strainer, let rest next to cucumber. *If yogurt is super thick, skip this step.
zest lemon and then cut in half.
grate 1-3 cloves of garlic while yogurt and cucumbers rest.
combine yogurt, cuke, garlic, lemon zest and combine with spatula.. Taste, then add more lemon, salt, pepper and garlic to your taste preference.
serve, adding drizzle of Extra Virgin Olive Oil for flavor and presentation.
