Don’t let yourself be put off by the coffee syrup: Once it’s done, the syrup will last you for up to six months if you sterilise the jar properly (see our kitchen tips below) – and the preparation time is then reduced to a mere five minutes."

    To make the coffee syrup, add espresso and brown sugar to a pot and bring it to a boil. Let it simmer at medium heat for about 20 minutes, stirring occasionally. Pour the liquid into a sterilized bottle. This makes about 250 ml of coffee syrup and can be used for other cocktails or desserts.

    Add 2 tbsp of coffee syrup, tequila, passion fruit nectar, and lime juice to a shaker. Fill the shaker with ice and shake it.

    Remove the pulp of the passion fruit and add half of it to a glass. Add a large ice cube and strain the mix from the shaker into the glass. Garnish with fresh mint and the rest of the passion fruit pulp. Cheers!
